they usually donate them to charity or give them to a player who had a memorable game. for example tehy would say the game ball goes to.. the players name who deserved it. sometimes in a game they use more than 1 ball because a player may give a ball away to a fan that was nearby after a touchdwon or so forth.

Donations and Charity...........sometimes they allow the players to keep them for personal reasons, like breaking a record. They USED to at least, but idk if they still allow it.
