Orthodox Jewish 'rules'?

I'm studying a play at the moment and focusing on the set, in their kitchen the orthodox jewish family have 2 sinks, is this to separate meat from everything else? If so, why? Is there any other small things like this that they do? What do they believe should or will happen if an orthodox jew does not conform? I apologise if I have made any incorrect statements
