Nokia 6700 Home Screen

I have one I'm using for awhile and can't change one thing that is driving me nuts:

One the home screen, there are a few options (not the shortcuts at the bottom). I have managed to remove all of them except the "Set up Email" option. It is annoying me as I don't want it, and it goes over the top of my wallpaper.

Can anyone help me?
 
Ok now I have another problem.

My shortcuts at the bottom of the screen have lost their highlight. I can't access any of them with the directinal keys. I can only press the menu key and go through the regular menu. I had it working fine until about 4 hours ago then it disappeared.

Any thoughts?
