Nervous about college?

I really want to go to a state university, but i'm afraid my GPA is gonna hold me back from my favored one. I'm not dumb, but i tend to not work very hard. we did those NWEA things this past week, and i got 253 in reading, 257 in math. which according to my teacher puts my way above average. but my gpa sadly does not reflect this.

as of now, my communitive gpa is 3.21, This is mostly because i take harder classes than are required. While i'm working my tail off to keep up in these classes, my same year friends have 3.4-3.7 gpa's because they take easy classes (school store, PEAK, development, speech, etc) that pretty much give you an A.
i was talking to my school counselor, and he told me that i SHOULD take easier classes at the start of next semester. but my parents think that colleges will see those classes and laugh at me.
I also do well with one teacher rather than others, in AP english 9 last year he gave us 40% extra credit on the easiest exam ever, for not going to the bathroom in that class for 10 days. I wanted to request the same english teacher this year, but my mom wouldn't have it. now i have one that is giving me a c+ for not putting a SEMICOLON in a standard.

do colleges really notice that i'm in harder classes or with harder teachers? my brother had a 3.8 at the end of his senior year, and he failed TWO classes first semester. but he had enough credits to still pass, and this meant they took the classes off his gpa. meaning he got graded on 4 easy classes (school store, orchestra, power tech, and senior english)

need help desperately, i'm contemplating changing my future job interests because of this. I really want to become a teacher, but the school i want to go to requires 3.4 for the teaching program. All i really have interest in other than that is building cars.
