Need opinions about taking 2 or 3 years of a foreign language in high school for

college? I'm currently a junior in high school and am having a scheduling conflict with my foreign language. I originally doubled up on AP calc (AB) and honors pre-calc, but have since found that it may be better to just take pre-calc first. In order to get something to replace the course, I may need to drop my language class (Italian). Freshman and Sophomore years I received A+'s as the final grade in Italian. Below is the list of courses i've taken so far and my grades. I'd like to know if it'd be a big deal to drop Italian this year if i'm looking to major in some sort of engineering/science.

Freshman year
Alg II honors - A
English Honors - A
World History Honors - A
Biology Honors - A+
Italian I - A+
Band - A+
Health - A+
Gym - A

Sophomore year
Chemistry Honors - A
Comp Geometry Honors - A
English Honors - A
US History I Honors - A+
Italian II - A+
Advanced TV Production- A+
Gym - A+
Health - A

This year, if I were to drop Italian, i'd be taking the following courses:
AP English
AP US History
Physics Honors
Pre-calc Honors
Stagecraft
Advanced TV production
Gym
Health

Would colleges look poorly upon the foreign language drop? I'm not really looking to apply to ivy league of financial reasons, but Northwestern, Boston U, UDel, Rowan, NC State, American University, and similar colleges.
