Need help with braised pulled pork recipe! How should I adjust the cook time?

i was originally supposed to do a whole 5 pound pork shoulder in the oven but last night i found out that my mom already got it cut into like 7-8 pieces but i'm still doing it. Originally it was supposed to go in the oven dry at 500 degrees for 45 minutes and then it was supposed to continue at 325 degrees for 2 1/2 hours with beer poured into the pan. Now that it's small pieces i obviously can't continue with the same times, what should i do?! I was thinking maybe even skip the whole dry 500 degree part but...what do you guys think?
