Need help, I have the Sony KDL40Ex400 1080 LCD TV and picture is not great, help?

I am gonna get right to the details. I bought the Sony KDL40Ex400 1080 LCD TV about 3 weeks ago. I am new to the whole Hdtv business. I have always had a magnavox Non HDTV CRT TV and I was very very happy with it. The picture was great on the magnavox. I did many experiments with this and I am at a loss. Now I only use the HDTV to watch High Definition Dish Network which I also got 3 weeks ago. Before I had a standard dish network receiver. Now I do know that both Dish Network and Directv do not broadcast in 1080 P. They both I guess broadcast in 1080 i except for Video on Demand Movies. The problem that I am seeing with the Hdtv as compared to my old magnavox is that the flesh skin tone is not that defined on the HDTV. With the old magnavox there was more color to the actors skin tone and I preferred it that way. With the HDTV, the skin tone looks like it is pale and I hate that and it has nothing to do with playing with the colors on the hdtv. I did that already. Also if you are off angle not straight from the HDTV, you can't really watch on the Hdtv as the picture isn't too great. I never had that problem with my old magnavox. You see at the moment I have my hdtv connected to my dish receiver using the HDMI cable and I have my old magnavox also connected to the receiver using the Red, white, and yellow wires. Also what I noticed with high definition is that is if that channel is not broadcasting in HD, the picture quality is horrible on the HDTV. Another thing there is like ghosting sometimes on the Sony hdtv. I know that my HDTV is only a 60 HZ, but I noticed the same thing on the 42LGLD520 tv which was a 120 HZ which I returned to best buy because I wasn't too happy with that tv. In the past month I even tried the Panasonic Plasma Viera TC-P42C2 720 P TV, I felt the colors on the Plasma were more intense and everything but it wasn't as bright as the Sony HDTV and the other thing that I noticed on the Plasma is that it wasn't 100% clear all the time as compared to the sony HDTV. So I had to return the plasma to best buy as well. I was wondering if the 720 P on the plasma was a problem because I could have bought the 1080 P Plasma instead but the thing again dish network and directv do not broadcast in 1080 P so it wouldn't matter right. I am only gonna be using the hdtv to watch dish network. Even the blacks on the LCD TV isn't as good as my old magnavox and even the Panasonic Plasma that I returned. What should I do with my Sony HDTV? I wish there was no ghosting at all and the skin tone flesh was like that of my old magnavox and I also wish that even if I am watching off angle away from the middle that the picture would be the same no matter where I sit. What should I do here? Which tv should I have gone with? I still have time to return the Sony because I bought it from Walmart and they have 3 month return policy, but I don't know what else to buy. I am not too happy with the whole High definition business. They should just have left everything the way it was 7 or 8 years ago. I want the best possible picture with the deepest blacks and the most clarity and the most colors and most crystal clear picture all the time even on the standard definition channels. Let me know all the details with model numbers etc and I wish to stay below $750. Thanks. I will be awaiting all the detailed answers.
