need bicycle mechanic advice?

found a 1971 raleigh grand prix bike. sanded and paqinted ,looks great. i am clueless on mechanics. my rims are steel,heavy,marked rigida H.P. made in france,slightly rusting, 27 by 1 1/4" H.P. for couple dollars found shimano hub and araya light alloy rims, these marked 27 by 1 1/4 w.o. they fit but the japaneese rims are narrower,why both are 27by 1 1/4 only the h.p. or the w.o. diffrent,is there diffrent style rims though sane size. i have heard of sew ups clincher etc. can i put my raleigh tires from one to other rim?. any advise appreciated. the hubs think marked on rigidas normandy. shimano rims and hubs so much lighter.
 
Don't worry about the small difference in rim width. The rims fit the frame, and you can switch out your tire set as you inquired. Before mounting your tires, though, take a good look at the condition of the wheels. Look for cracks near spoke eyelets and check for uneven tension in the spokes or if the wheel is out of true. If you think the braking surface might be worn, use a straight edge against the rim to get a better idea of the amount of wear. If the rim tape is missing or isn't in great condition, get a couple of rolls for a few dollars and replace it. I'd also open the hubs; there's a chance they're dry or need replacement bearings.
