avoid taxes? like for example:
If I have a coffee stand and I ONLY accept cash, then the receipts can be manipulated altogether so that I made nothing for the day. I think this is called, "taking off the top" i'm not quite sure what that phrase means.

I also know this is kind of illegal. But I'm trying to prove/disprove some things.

Any source of information weather legal or not is helpful. Thanks
