My temperature gauge reads 'HOT' on my 2000 Honda Accord LX?

Details:

After I drive my car for whatever amount of time (5 min, 10 min, 1 hr, etc) and arrive at my destination and turn off the car, I'll come back to it and turn it back on and the temperature needle will shoot all the way past the 'H', then after no more than 1-2 minutes it will level out immediately. It never happens while driving, only after I drive, turn it off, then turn it on again. Thoughts?

I replaced the following in May 2010:

- Engine Coolant Temperature Switch (Autozone)
- Thermostat (Autozone)

I'm making a trip to Victorville for the Holidays and I'd like to fix it before I make my drive.

Any help would be greatly appreciated.

The only reason I changed those parts back in May was for a cooling issue and it fixed the problem.
I see where you are coming from, thank you for the input, I believe I am going to be fine than.
Second Michael,

Actually, the fans do turn on, I here them come on when I'm driving but I never stop and check if they turn on when I turn off the car.
