Seriously, though, I think their church is really dry. My FIL falls asleep in church almost every time I have gone...

Simply state that you are not going. If they argue, remind them that you are both adults capable of making your own decisions, then pack your clothes and go home.

Tell them you'll think about it and then just don't go.

It's the best excuse for just about anything. No one wants to talk about it. No one wants to ask any follow-up questions about it.

Trust me, no guy will dare ask questions on that one.
 
Just go with your in-laws and enjoy your time together, or if it really against your personal values and beliefs to go to church, then just don't go. Presumably you are an adult, and that is your right.
 
Just go, and promise yourself a drink afterward. It's just an hour out of your life and a relatively small price to pay for family harmony.

blame it on your parents or other family members, say you've already said you'd go visit them or something.

Just tell them that you have your own way of celebrating the holiday if they ask. If you love them invite them to join you in your new traditions.
