My horse has really weird mood swings...?

so i could be grooming my horse and she could be basically asleep and all of a sudden she just puts her ears back at me. Its not cause im hurting her in some way she just does it randomly. Also when i give her a treat she tends to get really agressive. As well as if shes dosing and you walk up to her and pat her anywhere and she puts her ears back and then shes fine. Oh and if i ask her to step across or away buy putting gentle presure on her side she will move but she will have her ears back while shes moving. Its like everything makes her grumpy!

She is a really friendly horse but she just has her little moments. I cant really tell her off for putting her ears back at me cause then she would only get angrier. I was thinking maybe if she im rubbing her or something and she puts her ears back maybe i could keep rubbing her where she got angry and then stop when she relaxes?

She has never been abused or hurt. She is not sore. I think its because shes a pretty dominant mare. Please could you help me with this problem :) no rude comments :) if you have a question about her ask :)

Oh and what are some ground manners that a horse should have? e.g. no kicking, biting, rubbing against a person, not mugging for treats and standing quietly etc.
