My Honda VTR1000F Firestorm/Superhawk ?

I have a 1999 Honda VTR1000F Firestorm/Superhawk, whenever I take a ride, at a constant speed the temperature doesn't climb, as soon as I accelerate at rapid speed the temperature gauge jumps to a high heat. When I come to a standstill, the water in the Coolant tank boils. What could the reason be? Secondly, how would I know if I need to replace the Head gasket, on my machine?

Any help would be appreciated.
