My fish died a week ago and am still trying to keep the same cycle. Please Help?

I had asked an earlier question and thankfully got a good responce saying it is possible to keep cycling my tank after my fish died about 10 days in. I am told my choice of fish were not a good new tank/cycling fish, if any really are. I just tested my tank and my levels are as follows. Ammonia has come way down since the last time i tested about a week ago when the fish were alive it is now at bout 3 or 5ppm. My Nitrite has spiked even more since i had the fish to about 3 or 5ppm as well. And although i had never tested for Nitrates before they are now at about .25 maybe even .50ppm. What can i now do to keep this cycle going?? I ve read i need to add amonia. Should i do this or will it mess up the cycle. Is adding some hardy fish now to keep the cycle going a bad idea? Any suggestions confirming or adding to what ive explained would be greatly appreciated.
