My dog is great on a leash (or off, for that matter), but she lunges at cars and bikes.?

How can I make her accept that these things are not something you can lunge at? She loves car rides, and I've had bike riders stop to pet her - she doesn't mind that. It's just when they're whizzing by us, she lunges out and tries to bite them! Tonight, she even bit my hand! It's just bruised, I don't think she expected to actually get something in her mouth, but she's a 70 lb German Shephard mix (possibly boxer?), and she could really hurt someone. Any ideas?
Ah. I guess I'll expand on this. I use the gentle leader head collar, because she lunged so hard with a prong or choke collar that I couldn't hold her. I have a trainer that taught me how to work off-leash with her, in the event she gets loose - dogs who are trained only on a leash will normally only pay attention while on a leash. I don't, however, walk her near cars or bikes while off the leash - only in specific areas, like an off-leash dog park, or a huge field near my house, starting with a 20 ft leash on the ground.
 
You should hire a professional dog trainer to help you with this. You probably won't be able to do it one your own.
 
This has always worked for me but depending on the dog you might have to be very patient. Have someone you know to go out and ride a bike. Then take your dog out on a leash. have the biker come towards you and as soon as your dog starts to pull, very suddenly turn your dog the other direction and start walking that way. This works for almost any dog that pulls or lunges on the leash. If your dog wants to go somewhere, it will start pulling. but, if you turn it the other direction where they dont want to go, it will eventually understand hat she has to go where you want to go. If you want to approach the bike walk slowly to it and as soon as the dog pulls then turn the other direction. then turn back and try it again. at the beginning it might be frustrating because your only walking back and forth in front of your house for a long time but you have to be patient.
 
My one dog lunges at stuff like that too. The only way to stop it is to scold them when they lunge. My dog wears a pincher/choker collar and I just pull back slightly and she will stop. :)

Oh and btw, it's not good for dogs to be off-leash on walks. I have had bad experiences with unleashed dogs, trust me, don't let her off her leash at any time. It's not safe for her, or any other people or dogs near her.
