My car is a manual 98 ford contour sport. V6.?

It won't Idle right. It'll rev and die when I turn it on in a matter of 15 seconds. If I supply it gas a little while, it will instead rev, come close to dying, then rev all they up to 5000rpm before steadying at 1000 and starting the process all over again.
Would low Oil do this? Or is it the cold?
What's going on? I want an opinion in case me adding more oil today doesn't fix it.
 
Idle air control valve!!! I am going through the same exact thing right now. Cleaning it could help or it may need to be replaced.
