my beta fish loses color and then gets it back?

I recently bought a dark blue and red beta fish. I am keeping him in a 1.5 g tank. He swims enthusiastically on occasion but I have noticed that he is only his royal blue and dark red every once in a while. He loses his color and starts to turn almost completely brown. At first I thought that he might lose his color when he was scared because the first time I noticed it was when I was changing his water and he was swimming in a cup. I thought the change of scenery might have frightened him. Also I have not seen him eat a single thing since I got him about a week and a half ago. I have flake food called Betamin. I read that was good. Can anyone help? what should I be doing?
 
Please upgrade to at least a 2.5 gallon aquarium (preferably more) and buy a heater and gentle filter for your Betta.

You should not need to remove your Betta for weekly cleanings. Simply remove 25% of the water and replace it. Never perform 100% water changes.

He may be refusing food because the water temperature is too cool. They prefer a water temperature maintained between 77F-82F. If you don't already have one, please purchase a heater. Try to feed your betta frozen blood worms.
