Mexican cooks: Do you mix the ingredients of a burrito together before wrapping up the

tortilla? Or do you leave it in layers, like they do at Qdoba, Chipotle, or just about any burrito take-out place I've ever been to? I have only once seen all the ingrediants (e.g., meat, salsa, beans, sour cream, etc.) mixed together, and it was in the Southwest, but by an Anglo-American caucasion woman, so I don't know what to think. Is it more authentic to leave it in layers or to mix it together?
