Martial arts question? Getting fit?

I've been wondering how martial artists like jackie chan, jet lee, tony jaa, bruce lee... ect. Got such incredible flexibility, strength, speed ect...

I know that they all trained in martial arts from very young ages... so my real question is.. what type of training did they do (fitness wise).. and is it possible to gain those attributes starting training for such things late (at a age of 18 lets say..)

Im really wondering because im interested in Mixed martial arts... while mixed martial artists may win in a fight... they are no where near close to the incredible fitness of one of the people i mentioned.
