Mardi Gras draws near

Mardi Gras is two-and-a-half weeks away. Anybody planning a special menu?

Tuesdays are one of my normal days off from work, so I should have time to
cook. Here's my first draft:


MARDI GRAS BRUNCH
gumbo z'herbes with slow-poached egg and toast points
fried oysters with flying-fish-roe-spiked r?moulade
baked stuffed apples with cream
New Orleans gin fizz
coffee (WITHOUT chicory!)

MARDI GRAS DINNER
butter lettuce with broiled shrimp, crisp rice noodles, and vanilla-cane
vinaigrette
crispy braised pork shank with cauliflower puree and coffee-balsamic
gastrique
caramelized fennel and garlic
beets with pralines and goat cheese
chocolate mousse with orange/cinnamon whipped cream

Aside from being drunk sipping hurricanes all the time, the parades were
great fun too!

I laughed at NOPD, New Orleans Police Department. I still chuckle about it!
