Magic The Gathering? Can you cast an Instant in the Damage Phase?

Had a game today and was wondering if you can call Instants (More specifically Power increasing Instants) on a creature during the Damage phase?

I had declared my defender (A Vampire Nighthawk) against my opponents creature that had a Bear Umbra on it and it also had Trample from the actual creature. My Nighthawk was easily defeated and its Deathtouch removed the Bear Umbra off of the creature as it had Totem Armor and so the Trample damage was coming through which is all fine and dandy but my opponent proceeded to power up his creature to deal extra damage where I cant declare blockers?

Is this right? Im thinking he has to declare it before the damage phase and definitely before the Nighthawk died because at that point the fight between the creatures had taken place.
