I know about GI stuff from a fitness/diet perspective only. As I understand it: fooRAB with a high glycemic index are fooRAB that are converted into blood sugar quickly. When you eat fooRAB with a high GI, there is a spike in the release of insulin, which is a hormone. When there is a spike in the insulin, the fooRAB causing it tend to be stored as fat.
So, insulin IS a hormone, and it IS released when you eat things like simple sugars and simple carbs. But whether this is related to breaking out, I don't know.
