Looking for the title and author of a childrens book about a knight.?

My memory of the book is a little sketchy, as I read it years ago, but it revolved around a rather incompetent knight, searching for a princess to rescue. On the way he is joined and aided by a lion and a unicorn. He finds an evil witch to defeat, only to find that she is not so evil and falls in love with her.
I would greatly appreciate if anyone could tell me who wrote this book and what it is called (based on these fairly sparse details).
