Looking for extra fees, catches, and fish-hooks with the new iPhone 3GS?

I want to buy an iphone, but i would first like to know about any of those hidden fees hiding around in the fine print and whatnot.
I know that the iPhone is either 200 or 300 dollars (depending on which one you get), and must have a contract with AT&T for at least 2 years. There are four or so different plans for it, the cheapest one being $69.99. Also, I know there is an optional messaging plan, which also has 4 or so different choices.
So other than the initial buying of the iPhone ($200-300) and the 2 year contract ($69.99/month minimum), what kind of other fees and stuff would I have to pay, like activation fees? What kind of tricks might they play on me that might leave me stuck in a contract for longer than I thought, or for extra $$$ etc etc......
What if, just as an example, I wanted to change my contract from a smaller, cheaper one with very few minutes to a higher one, or vice versa? How would that work?
Please just try to tell me as much as you can in this regard. Thanks!
