I have only seen fresh ones in photographs. All the ones I have seen

But I know how you feel. I had a groundhog devour all my Brussels
sprouts stalks just at harvest time.

Ack! Other than the ones on my tree, I have seen one locally all
of once! That was years ago in a Southeast Asian market in
Lowell, Mass., which is home to many Cambodians. I have looked
for them ever since, with no success. A nice person from a NG
sent me some limes some years ago, and I tried growing trees from
seeds. I forget what happened, but they didn't survive. Sniff.

There is nothing wrong with kaffir lime juice, period. Throwing it
away would be a waste of food. 1.8 million recipes don't lie (many of
which are Thai or SE Asian). But they don't have to be Thai recipes.
And I don't care what three other people say, I'm not going to waste
the juice.

And frankly, I find the zest much more overpowering than the juice
itself.

So neither of you have actually experienced using the fruit and you're
telling me - who HAS used the fruit - not to use it?

Does not compute.

Actually, someone sent me the fruits, and I dug out the seeds.
There was pulp but very little juice.
