Jailbreak help, APPLE iPOD TOUCH!! HELP!?

Okay. Here. We. Go..-->
I am purchasing an iPod touch 3g 32gb model...or the iPod touch 4g coming on sept. (Maybe? RUMOR)

And I was wondering, jailbreaking - is it worth it...I have questions:

1. Can you use the app store?
2. Still use itunes, music, etc?
3. Can you still change the backgrounds??!!
4. Do regular things?
5. Jailbreak 4.0 firmware??
6. (Cydia) info?
7. Can you un-jailbreak. [Restore?]

ALL INFO~!
I don't want to mess this all up!!
PLEASE ANSWER!
I'm attempting to know everthing and watching lots of videos. (:
