Is this normal? Condensation on hoses, Jeep Grand Ch.. 2001?

We just had our heater core replaced (big operation).... When we got the Jeep home I popped the hood and checked the coolant level and it seemed to be really low... I could see some coolant down at the very bottom of the container but it was a good 4 inches away from the FULL line..... Mechanic said it was normal and to just top it off with water the next morning..... Does this sound right?

Also; I notice some condensation on a few of the hoses near the battery, perhaps this was always there am I'm just now noticing? Does this sound normal?

I know this mechanic is top-notch, been fixing vehicles for over 25 years... I don't doubt him, probably just being paranoid..

Any info appreciated.
