...are healthier when they're cooked.? Should I steam my spinach or cook in water (in which case, i feel the nutrients would be thrown out with the water).

Why not try a spinach salad. Any time that vegetables are cooked in any way, they lose at least a little of the nutrients. Raw vegetables may not always taste the best in all cases, but they are always better for you, as long as they're clean.

steaming is the best way to keep all of the vitamins and minerals intact in your veggies from what I underestand

do not microwave, it zaps all the nutritional value out of your food the longer you cook it

anyway, I'd imagine raw is the 'healthiest' method of eating veggies, but are we rabbits or people? I love my veggies steamed, but "al dente" so they have a nice little snap to em. I hate mushy veggies.
