Panfish is a fish named after the method most people cook it by. Using a pan. Because they're flat, oblong fish, they fit easily into a frying pan. also, they look like pans.

No, salmon is not a pan fish. A pan fish would be a fish with a round body like bluegill, green sunfish, pumpkin seed, ect.
 
A pan fish to me is a small fish that can be fried easily in a pan. . .bluegill, sunfish. . .smaller fish. Salmon is too large or should be. . .I googled it to be sure. . .any fish that doesn't outgrow the frying pan.
