Is it true that fish grow to the size of their habitat? And mixing fish species?

I just purchased a ten gallon tank with a little bit of decor and gravel. I've been looking into South American or African Cichlids, which are a very beautiful and cool fish. I want to stay with fresh water fish. However, everywhere I've been reading it says that these fish grow to about 14 inches in length. I want to have two or three fish. Is it alright to mix the different subspecies of African or South American Cichlid, as long as they're the same size/temperament? And also, will a ten gallon tank support two or three? I've heard that they're demanding to feed (though that's really not a problem, bloodworms and pellets don't really bother me) and get large, though I've also heard fish grow to the size of their habitat. Or should I look into a different kind of fish?
 
it depends on the fish. some fish, like red-tailed sharks, only grow to 6", whereas fish such as koi will grow to the size of which ever habitat you put them in.
