You question has too many variables, even down to the type soil under the mud as clay will not release as easily as sands. The winch will probably do what you wish, but to get the true dead weight of your vehicle go to a truck stop or grain elevator (or similar) and put it on the scale.
Most often, it isn't the winch that has problems, but the mounting. No winch is worth anything if it isn't securely mounted. Most bumpers on today's vehicles are not sturdy enough to take the strain, and low cost bolts instead of class 5 or better can break.
Generally, Harbor Freight doesn't sell the top of the line stuff you can depend on. Best to visit an off-road dealer or stay with brands such as Warn.
