iPod Touch 4G Security?

Recently, my iPod touch 4th generation was stolen and i'm a bit worried on what may be accessed and what may be purchased. I just went onto iTunes and erased the credit card billing information to 'None.' Simply, you cannot bill to the credit any longer, only to gift cards or prepaid cards deposited into the account. But anyway, even though I have changed it on iTunes, would it still somehow sync to my stolen iTouch even though its not literally connected to my computer?
