Insurance problems, totalled bike. HELP?

I have a super sport motorcycle that has been wrecked and totalled. The accident occured almost two months ago and my bike has been sitting in a repair shop since then waiting on my insurance company to figure out what they want to do. What i need help with is i need to know what to do. First of all, when i called to get insurance on the bike, they never sent my info to my agent so i actually never had insurance. Luckily i saved my conformation emails and sent them to my agent and a higher up in the state farm company. It took them weeks to send me a paper to sign stating that i had coverage. Once that was taken care of and they decided to cover my accident, They contacted me to give them my story of the wreck and everything. Ive had to call everyday for 6 weeks for them to finally send a claims adjuster to the bike shop and he declared the bike a total loss. I called the higher up who is handling my claim and he told me that they were waiting on under writing to change my deductibles to what they should be. He told me that my deductibles said $500 collision and that it is actually $1000 collision. I have been paying for insurance for $500 deductible, and he said that it was because i transferred coverage from my mustang onto the bike, and the mustang had a $1000 collision deductible. (I recently bought a truck and asked about transferring coverage from my other bike onto my truck, and they said i cant switch from an automobile to a motorcycle.. Can they do it in the other direction to save them money??) I also have new statements from state farm stating in writing that from nov 2012 to april 2013 the bike has $500 collision coverage. I need to know if i should pursue the $500 deductible, or if i should just take the loss and try to get this settled sooner.

One more thing, If the bike is declared a total loss, about how much could i expect to pay if they were willing to sell the bike back to me with a salvage title instead of sending it to auction? it blue books for around $5700
