i decided that it would be fun to have eggs benedict the easy way for brunch with a few friends. i've made it before, but lost the instructions to "poach" the eggs in a muffin tin- i think i put the eggs in greased tin & put foil over and then placed it over a pot of boiling water - does that sound right?
help -
oh - also - any ideas of a veggie dish to serve along side - i thought i'd have eggs bene, fruit salad, mimosas & coffee, but i think i need a veggie component to balance the brunch! thanks
