in writing, do you use a capital when somone has said something i.e : she

said," that...? i have totally forgotten whether it should be a lower case when somone has written something like the following:
Mary, company director,said." that the...." - in other words should 'that' be capitalised in this instance? I know when the quotation is started without a 'he said',it is capitalised.
