Freaked Out

So far, no one has ever been able to explain this occurrence from about 2 years ago.
I was at a conference at a hotel about 1 hour from my home, and I had one person carpooling with me. At about 12pm, I grew extremely sleepy and decided to take a nap in my car for about 30 minutes. When I left, I was sure to lock the car (I am obsessive about this)...and the car will not lock while the door is open if the key is in the ignition, so I most certainly did not leave it there. At around 5pm the conference ended and my companion and I headed to the car. I unlocked the doors and we both got into the car. I put my foot on the brake in preparation for turning on the car (I do this for safety)....when the car suddenly revved and all of the lights (headlights, dash lights) came on. Now, it was not weird that the light came on when the car started...I usually leave them on and they turn off automatically when I take the keys out of the ignition...what was weird was that THE KEY WAS STILL IN MY HAND, NOWHERE NEAR THE IGNITION! Also, why did the car rev? My foot was most definitely on the brake, I checked....and even if I had accidentally stepped on the gas, the car was off when I got in and I had not yet put the key in the ignition. My companion and I both jumped back in surprise, and my hand grabbed the shifter for balance - at which point the car suddenly stopped - dead, no lights, no engine. My companion turned to me and began to ask why I had done that, when he noticed that the keys were still in my hand and FREAKED. (Seriously, he jumped out of the car and screamed like a girl). I immediately began checking the car for any signs of tampering....everything looked fine and as I said the car was locked.
This exact situation has not happened again, but my car lights do turn themselves on every once in a while, even when they were certainly off when I left it. I'll get a knock on my door from a neighbor every few months when they notice them on at night. The car is parked, locked, off, no key left in the ignition and no sign of tampering. The rear and head lights don't come on (even though I had technically left them on), but almost everything else does - dash lights included. It is really freaky.
Everyone I have asked about this, at every autoshop I have ever visited, has always given up and told me my car is haunted.
I do not have touch ignition or remote start, my car is a 2005 Hyundai Accent GT.
My car also sometimes lies to me and tells me that it is empty on gas when it isn't...it always happens during the summer. I think this is more likely a sensor issue, though, and I've taken to using the tachometer to cross-check.
