I'm looking for a flat bar road bike. So far I'm thinking the Trek 7.2 fx.

Any suggestions? $500 or less.? Also, what do you think of brands like Kona and Fuji? Do you think these would be good choices? There is a bike shop that will tune these up for free for life if I buy one of them. My goal is to ride around town, and leave the option to do a 100 mile ride. I'm nervous of the feel of drop bars, but if the stem adjusts I may feel okay.

Any of the major brands will do. Kona and Fuji both make nice bikes and you cant beat a free tune up for life. Don't be afraid of the road bikes with drop bars, most people ride with their hands on the hoods anyway and it's very comfortable. You can move you hands back to the flats and ride more upright or in windy or high speeds you can use the drops and gain 1-2 mph. They can replace the stem to what ever you like. The right size frame will feel very comfortable. I have a road and a fitness bike and for long distances and speed I'll pick the road bike every time. The only problem is the road bikes cost more.
