I'm currently soaking my pocket bike's carb in gas to clean it. After that what do i do?

You disassemble it and thoroughly clean and
blow out all the dirt you washed into it by soaking it.
 
take it out of the gas,,,disassemble and put it in a proper carb cleaner. After a couple of hours remove from carb cleaner and wash with varsol. I usually rinse in hot water and blow dry. Assemble with new parts and make sure all adjustments are according to specs. Just gas will not clean thats what gummed it up in the first place
 
Gas won't clean it very well.
I'd go with liquid carb and injector cleaner. If you have it apart then blow dry it with air. Be careful though not to lose any parts. When it is clean then put it back together and re-install it.
 
remove the carb from the gas, disassemble it and soak it in carb cleaner or at least spray carb cleaner thru the parts and then blow dry. Make sure all jets and all the little tiny wee itty bitty holes in the jets are open and make sure no dirt or dirt residue is on any carb part, then make sure the components are within spec, reassemble and reinstall.
