If you jailbreak an ipod touch 3rd generation can you still use the items

downloaded from your itunes? Lets say you download everything, videos, music, pics, apps, from itunes. Can you still use those after you jailbreak it, or does it erase everything after you jailbreak it?
Would I still be able to add apps from itunes and put music from the itunes store?
