if you eat fugu not prepared well, is it certain you will die?

i was thinking about this because when i was 7 or 8, my mom tried fugu that my family's seafood restaurant's fish cleaner prepared. she had to go to the hospital for it, but she came out fine. what percent chance is there that u will die eating fugu that is not properly cleaned
