If I workout & eat healthy, but don't count my calories- can i still burn fat off?

Alright so saying goes you gotta count your calories so you can burn em to lose weight, now i want to burn fat off, but can't i do this by eating pretty healthy & 6 small portions a day? do you know the reasons why or why not? i'd love to know. i'm 20 female 135lbs & 5'6. im not fat not skinny but i'd like to be firm everywhere. i eat pretty well> no greasy foods or sweets, just like sandwiches with mustard & lunchmeat no cheese, oatmeal, fruit, grilled chicken, eggs. if the alories are over the amount i need to burn off- this mean i really wont burn fat off? any facts like how the body works so i can determine these things for myself, thankyou i appreciate it:)
