if i were to open my own mexican buffet restuarant, what types of mexican

I don;t know that Mexican buffet would be th best idea.

Hold encheladas and burritos would make them soggy.

A taco bar or tostad bar would be okay but like i siad I would not really recomend a Mexican buffet.
