If I have a pot of soup cooking in a crock pot, near boiling temperature, how long is it safe to eat?

I'm thinking indefinately. You can boil bird crap water to make it safe to drink. As long as I keep my soup near boiling I should be okay, corrrect? Can't I just add veggies, cooked meat, and water as needed??? I'd like to hear your opinion... Andy
