If I am making beef stew in the crockpot, do I have to cook the beef cubes...

...separately first? Last time I made stew in the crockpot it looked really bloody and mixed with the chicken soup mix and turned a brownish color...i dont know if that was normal
 
that's normal but you should batter and fry the meat first it helps make gravy for the beef stew and you will know that the meat is done
 
No, to make the best stew, you should cook it all together, but do so very slowly - for at least a couple of hours.
Once the time is up, you will have lovely tender meat, and an even better flavour in general thanks to the slow-cooking.
 
You shouldn't have to cook it separately. Only if you are using the crock-pot for less than 6 hours. Typically with stew meat, should be 7 or 8 hours. If it's being cooked for less time, cook the meat separately, but not too long and add it to the pot with the other ingredients. Here is my own stew meat stew concoction for the crock pot.

Slivered onion
stewing beef
chopped celery
chopped carrots
some cilantro (optional)
1 can diced tomatoes
1 can of red beans
1 can of black or navy beans
A few dashes of worcestershire sauce
a few dashes of red wine vinegar
you can add potatoes but I don't
Same goes with cabbage
Must have 1 beer. 1/2 goes in the crock pot, the other 1/2 you drink

Combine all in the crock pot. Setting on high for about 5-6 hours. Then low to keep it warm till it's ready to eat. I will cook rice to lengthen the stew to eat throughout the week.

No, in a crock pot the beef cubes should cook completely through. Are you sure you are cooking it long enough? It should cook for about 8 hours or so.
