If artificial sweeteners are used in place of sugar to bake cookies, is...

...another ingredient required for bulk? I'm talking about artificial sweeteners that are NOT measured the same way as sugar, such as saccharin packets or liquid. Since a cup or two of sugar would be taken out of the recipe, and only a small amount of artificial sweetener added in, would it ruin the recipe? If so, is there another ingredient that could be increased or added instead?

(For the purposes of this question, let's pretend that artificial sweeteners that are already bulky and measured like sugar don't exist.)

Thanks!
