Ideas for candy buffet table at my wedding?

My wedding is at the end of July. I am wondering when I should start buying candy for the buffet table. I don't want to wait to long, but I dont want to buy it too early either and have it go bad. So when should I buy it?

Also, my colors are cranberry red and silver. Does anyone have any ideas for what types of candies I should buy? There will be 7 vases to fill.
