It's definitely possible. Just stick to local roads with shoulders.
You can use Google Maps to plan your trip-- Use the satellite views and look at the local roads. Avoid major thoroughfares that are sure to have lots of motor traffic.
You are going to have a heck of a long cue sheet though, to cover the 400+ miles between Quebec and Toronto. Best bring along a handheld GPS unit or smartphone with GPS (like an Apple iPhone 3G) so you don't get lost.
You also want to figure out where to stay the nights. Perhaps find out beforehand what motels along the way you want to stay at.
Hopefully you are doing a supported ride (a car following you with all your repair equipment and food and water), but if you are doing it unsupported, you will need to figure out how to bring all the necessities with you.
