ingredients). Any ideas? I have boneless skinless breasts to work with. I also have mini-pitas, wheat bread, tortillas, and a jalapeno twist roll for bread choices.

I have peanut butter, eggs, butter, and flour. I will probably have to run to the store to get more ingredients.

Does anyone have any ideas for my picnic, or for these ingredients?
 
Well - you could buy some red bell-peppers, cucumber, tomato, lettuce and make mini chicken pittas with a dash of sweet chili sauce or mayonnaise in each - excellent choice. The same can go for tortilla wraps and some chicken-salad sandwiches.

You could always char-grill the chicken for some extra flavor...

Big tip, though: pack everything separately in tupperwear, that way, the bread doesn't get soggy and whatnot due to the salad.
 
The sandwiches sound good.Make a couple out of each f the breads. I suggest putting a little tomatoe in them and maybe some shredded cheese?

The peanut butter cookies sound good, maybe add some chocolate bits to some?

Here is a recipe for your chicken sandwiches that doesn't require mayonnaise - since that's what has a tendency to go bad on a picnic. I got this recipe from an English Afternoon Tea class I attended a number of years ago. Enjoy!

GOLDEN CHICKEN

2 hard-cooked egg yolks
1 tsp butter, melted, cooled
1 tsp lemon juice
1 c minced cooked chicken
1 tsp chicken stock or broth
salt and pepper to taste
small celery stalks with leaves

(Egg yolks add richness and color to this chicken filling)

In a medium-size bowl, mash egg yolks with a fork. Stir in butter and lemon juice. Add chicken and stock; season with salt and pepper. Mash to a smooth paste. Make sandwiches with chicken mixture. Garnish with celery.

(Also keep in mind you could bring thin-sliced cucumbers with some rice wine vinegar sprinkled over them in a tupperware container to make a sandwich with - just put a little cream cheese on one piece of bread and butter on the other. You could even add it to your mini-pitas.)

2cups peanutbutter
1 1/2 c white sugar or (brown for more chewy)
1 egg

1tsp vanilla if wanted (optional)

375 degrees
9minutes.

so easy and delish!!
