I want to know what variety of yam is typically sold in Mediterranean markets?

I am looking for the name of a huge yam so I can find out how to cook it. They are rough and greyish brown on the outside and some where as long as 3 feet. The shop owner didn't have anything other than Yam on the sign. Thank you.

NOTE: Not to be confused with sweet potatoes. Thank you.
