If you just want images and not video take a screen shot of it on your iPhone by pressing the home and the sleep button at the same time, Now if your actually want to do videos of the screen then a cheap video camera or digital camera should work, just make sure the brightness on your iPhone is at its brightest and to make it even better turn the light off where you are filming it so there is no glare.
